Today I found her pulling hair out of her chest. I know all rabbits are different but will it take days, weeks or months before I can pick her up again without her trying to take my hand off!! When she's not hormonal she's an absolute sweety.I had my rabbit spayed yesterday. How long does it take to notice a difference in her behaviour?
Give her a week or two to heal fully although she will be fine to handle gently within a couple of days.
It can take a good few weeks for her hormones to settle down though.
Handle and fuss her regularly and you can help her adjust alot quicker.

Its not just the recovery from the operation that you have to wait for. She will still have hormones in her system for at least a couple of weeks that are telling her body she can still reproduce. Once these hormones settle down, you should notice a difference in her.

every animal is different. It took my dog a year to get over it, but she still didn't go completely back to normal.
i think it may take your bunny a few weeks until you can pick her up again. make sure she doesn't gain too much weight, because animals can gain alot of weight after they have been spayed.
Give her time. I have a buck and got him neutered five years ago. I don't quite remember how long it took him to heal (want to say it wasn't more than a week), but it didn't help his chewing or energy level... he never slowed down and still chews on EVERYTHING!!
